ETA: I have made the rolls, and lo, they were good. Because I've never met a recipe I can leave well enough alone, I added cinnamon and clove, and an orange worth of zest, and NUM!
Guatamalan Sweet Buns
(Makes 8 buns, theoretically)
*15 g fresh yeast (roughly 1 tablespoon)
*1/2 cup warm water
*3 3/4 cups unbleached white bread flour
*large pinch of salt (so use large hands)
*5 tbspns granulated sugar
*1/2 teaspoon ground anise seed
*1/2 cup coconut milk
*8 drops vanilla extract
*1 egg
*3 tbspns vegetable oil
Cream the yeast in the warm water. Mix flour, salt, sugar, and anise in a bowl, and make a well in the center. Add yeast liquid and mix in a little of the flour with your fingers to make a sponge. Leave for 20 minutes, until bubbling.
Add coconut milk, vanilla, and egg to the bubbling sponge. (At this point, I'm flashing back to King's Quest III pretty hard.) Mix to form dough. (Recite incantation over dough.) Add the oil and knead it in while dough is still in bowl. Turn onto a lightly floured surface and knead for 5 minutes. (Wave magic wand.)
Cover dough and let rise in a warm place until doubled in size. (How can you do that? Sierra asks.) Turn onto a floured surface and divide into 8 pieces. Roll pieces into thin strands about 16 inches long. (If dough resists stretching
get a rack roll it in stages.)
Shape each strand into a spiral. Pinch the end in. Let the buns rise under oiled plastic wrap on a greased baking sheet for 30 min, until doubled in size. Preheat the oven to 450. Bake for 15-20 min, until evenly browned. Cool on wire rack.
Feed sweet bun to wizard.
